Production Notes
The fruit for this wine comes from the La Cienega Vineyard, located in Alexander Valley in Sonoma County. The fruit was hand harvested, October 19th and received by us, Oct 24th. The fruit was de-stemmed before the must was transferred to open top fermentation tanks.
We cold-soaked the must for 7 days prior to fermentation, where additions of acid, tannin and enzymes were made.
The must was warmed, and fermentation was allowed to take place without the addition of commercial yeast, with 3 daily pump overs. Fermentation was completed in 12 days, at which point the free wine was drained, and the skins transferred to press. The press wine was not added.
Secondary fermentation was initiated by the addition of L.A.B and finished late January.
The wine was aged in 4yr old French Oak barriques without additional rackings or stirring.
The wine was blended two weeks prior to bottling, racked off the fine lees and then filtered through 7 micron to ensure any remaining particles were removed. The wine was bottled without further additions, 442 cases produced.
Wine Description
Medium or dark Ruby in appearance, with medium plus aromas of black cherry, black plum, black currant, mocha, coffee, with some smoky or meaty undertones. Additionally, some floral elements of violet or lavender. The plate is medium bodied with good length, medium plus acidity and is bone dry. There is some additional flavors of toast and milk chocolate along with the aromas.The finish is medium, but this wine may benefit from 1-3 years in the bottle.
A style of wine that is meant to be enjoyed young, either on it’s own or with smoked or spicy meats and hard cheeses.
