Production Notes:
The fruit for this wine comes from our 7 acre block, planted in 2000, historically producing our fines red wines. The fruit was harvested by hand October 10th and taken to cold storage for 48 hours, before being processed.

The fruit was de-stemmed and then assorted to remove any un-wanted stems, leaves or compromised berries. There was no crushing of the berries, choosing to keep the fruit intact. The must was transferred to open top tank, chilled while additions of tannin, acid, enzymes and other products were made. The must was allowed to warm up before a cultured yeast was added to initiate fermentation.

Fermentation was completed in 12 days, during which the must was pumped over three times daily. The wine remained on the skins for an additional 18 days, before being pressed off directly to barrel. The press was wine was immediately added to the free run wine, due to the quality.

Secondary fermentation took place naturally and was completed in June of 2018. The barrels were racked and blended, and the wine returned for ageing. Very little stirring took place, with only occasional topping off occurring.

Prior to bottling, the wine was assembled, lightly filtered and then bottled August 28th 2020.

Wine Description:
Dark Ruby red in color, with perhaps some purple tones. Beautifully extracted, showing no signs of sediment.

The nose is beautifully fragrant and floral with sweet ripe berries, violets, dried herbs, cedar, and pencil shavings. Beautifully complex and intricate and ever changing which is to be expected from a young wine. With some aeration, the shows a touch of leather or pipe tobacco.

The wine shows lovely acidity on the front before transitioning to the mid and back palate, showing ample tannins that are supple and silky. This wine has plenty of fruit, dominated by plum, black and boysenberry. The finish is long and drying that suggests this wine needs a few more years in the bottle to fully integrate.

This is not a massively extracted wine, it showcases more elegance and restraint and is perhaps more reminiscent of an Old-World version.

So put this away for 5-8 years and enjoy.
